Our delicious blackberry pinot thyme jam is a seeded jam for added texture that is great for just about anything. A result of of a collaboration with one of our winery partners that makes an excellent pinot noir, that tartness from blackberries just seemed to lend themselves perfectly with the wine and the pinch of thyme made it round out perfectly.
We start with only fresh picked berries that were hand selected and cleaned from either local growers at the farmers markets or from one of many local u-pick berry farms. Our recipe uses only fresh blackberries, pure cane sugar, a bit of pinot wine, a pinch of thyme, a little citrus pectin for help with gelling and a generous splash of freshly squeezed lemon juice for a little zing to the flavor in this magical combination.
